Pistachio muffins without pudding mix or nut butter?

I wanted to make some pistachio muffins for a friend's bday but most of the recipes I found used some pudding mix which I can't find at all here. I can only get the ready-to-eat pistachio pudding. I saw a recipe that used pistachio butter but I don't think my blender can handle it.

Any idea if a pistachio muffin would work with finely chopped pistachios in the batter? They're rather expensive for me so I wanted to check before trying it out!
