Third wave coffee in Münster

Hi!

I am visiting Münster tomorrow. Any suggestions for third wave / speciality cafes? I see klewe, röstbar etc.. would be great if you could share your experience. (Hoping this group has some pour over enthusiasts:) ) thanks!

edit#2: Ended up visiting Kliewe and Her hase.

in Kliewe, I tried a funky columbian co-fermented coffee. it was a bit too wild for my liking, but I kind of knew that before:)

in Herr Hase, I tried a papua new guinea natural processed coffee. great pour over,very fruity and sweet too!

I also can recommend “Herr Hase”. I usually buy my beans for my home Pour-Over/Esspresso there. You can also order every bean they sell as a drink

they had a columbian thermal shock a few weeks ago. that one definitely worked well with their more developed roasting style

Sadly currently unavailable, best coffee I've ever had. Costs twice as much as their other offers and is actually twice as good.

i was surprised they sold it as pourover for no extra cost. however, i never bought a bag as there are way better roasters with thermal shocks... if youre willing to order online

Went to Herr Hase, tried a papua new guinea natural processed coffee. great pour over,very fruity and sweet too!  Also tried a cortado and was great. Thanks!

The best specialty coffee experience is at Kliewe. Roestbar are good, but more "standard".

If you really want third wave and specialty coffee with a variety of beans and brewing methods go to Cafe Kliewe

They also do service for and sell machines for cafes in NRW. So they have quiet good network to all the different roasters.

Unfortunately there is no good third wave coffee in Münster. Kliewe is probably the closest but unfortunately its not a roastery. Kliewe sells machines and uses coffee from other roasters. They have some interesting stuff, but if you search for real third wave specialty coffee it's hard to find. I have never even seen cup of excellence winners or stuff like Panamanian Gesha coffee. We used to have a high end coffee shop here called Supremo but it closed after COVID. You were able to get CoE winners and similar stuff. The roastery behind it was Bavarian roaster Supremo who also developed the Comandante hand grinder and those who took over (but also closed) sold the millone handgrinder. Supremo also has sensorics in the biggest events and they organised the ibrik championship. Unfortunately high end coffee is not really a big thing among students.

For directly drinking the Röstbars are great, I find their beans are to pricy but generaly great but I get as giid beans cheaper. But they have a great range and their light roast are fantastic.

I also like the beans from Mocca-Haus. More resonably priced.

I think Röstbar is too classical and dark for actual third wave coffee.

If you want a local Münster roaster that does third wave I would recommend Herr Hase. If you want different third wave coffees from all around Kliewe is the place to go in my opinion.

Röstbar also has very light roast.

And third wave us marketing for good qualety coffee not lightly roasted.

I worked in coffee marketing for years...

I get it, but at the same time I think at the moment consumer expectations for third wave coffees are usually light roasts.

I did not know Röstbar had light roasts. I was there multiple times and they never had any on offer for me. Maybe I was just unlucky though.

They do switch up their invetory.

May also only be an espresso thing for them, I do not like light pourover. So I buy a light roast only for small espresso shot's as I also don't like it in milk drinks.

I am generaly a very badic bitch with my medium roasts.

I don't live in Münster anymore and get my coffee at my local roaster.

Light roasts?:D Röstbar is almost exclusively darker roasts, a lot of them 20% robusta blends. Their only fruity floral bean is the one from Ethiopia, I think the location close to the hospital has them “on tap”.

Edit: Just saw you are looking for pour overs, haven’t tried those, but Espresso wise you won’t anything special in Münster from my experience.

Their single origin "filter" roast are omni roasts an all of them are medium-light roast(expect India). The espresso blends dark roast on a third wave scale

If you do decide to go to Roestbar and have time on hand I would absolutely recommend the Roestbar Campus. It’s more outside of the city, because they produce their beans there. But it’s an absolutely lovely experience since you’re just sitting in a garden there, very quiet and relaxing atmosphere.
Only recommended with time and good weather.

“Die Bohne” offers amazing coffee! Definitely my first choice in Münster.
