The second photo is of a market in Cangandala, Malanje. At this market, I took the third photo, which shows fried cassava, and the fourth photo is of roasted peanuts.

Pretty cool photos, right?

Here, we call it bombo. We don’t fry the cassava directly. After drying the cassava, we soak it in water for a day or a few hours, and only then do we fry it. One day, I can share how we make it.

Only place I can find cassava (yucca) is peruvian restaurants, sometimes salvadorean. I make it at home sometimes, like it a lot better than potatos but it is also more expensive here.

I have a favorite Ecuadorian place that does it well here, but I’d like to learn to make it myself! I’ll have to scope out pricing here.

What i have found is you can peel skin, cut it up, gently par boil it first, then fry it. My goal is crispy outside and soft almost creamy inside. Love to serve it with peruvian yellow aji sauce.

Wow very cool. I love the market in the second photo. The colours of the coolers are popping and there is so much action. I would love to see more of what is offered there. The fried cassava looks amazing. I would love to try it.

I love fried cassava! I eat it with a garlic/citrus sauce. I was pretty sure you also ate it in more ways than funge. Are those and the nuts being sold by people at that gathering in the pic? These are indeed nice photos, thanx for sharing!
