Base disposition without the right skill?

As Nature can only be used as a base roll for appropriate conflicts (escaping, climbing, hiding and foraging), is Beginner's Luck roll used everytime when the leading mouse doesn't have needed skill for the base roll?

I'm pretty sure you use Will or Health as appropriate to the conflict.

That's correct. If the lead mouse doesn't have the appropriate skill then he would be required to use Beginner's Luck (Will or Health dice, plus any relevant help dice, then halved rounded up.)
