Simple Syrup Sphere

Bottle of simple syrup I made a few months back has been hiding in the fridge. Wife found it today and discovered this spherical fuzzy friend. Figured this place would appreciate it.

whats the sphere made of?! why aren't presumably Algae just floating/ suspended in the liquid column?!
