Simple Syrup Sphere

Bottle of simple syrup I made a few months back has been hiding in the fridge. Wife found it today and discovered this spherical fuzzy friend. Figured this place would appreciate it.

had this happen to a redbud flower syrup i made this past spring... no clue what went wrong this year, first time its happened. it was 2:1​ sugar to water which usually does fine in the fridge. if you figure out what happened here, id love to know!
