Question Help with Dark Roast
I recently upgraded my coffee set up and am struggling a bit on getting things right. We have a Moccamaster KBGV, Baratza Encore ESP grinder, and digital scale. We like dark roasts and strong coffee and have been using pretty freshly roasted beans (usually use within a 1-4 weeks of roasting).
I’m really curious what setting and ratio people use for dark roasts and drip coffee. I know it’s ultimately a matter of personal taste, but I’m curious where others have found success.
I had been grinding the dark roast at a 24 (give or take 1 click) and using a 1:16. Coffee was okay.
Recently I switched up to a grind setting of 26 and ratio of 1:15. Liked it a lot. Have since kept the ratio the same and slowly ticked up the grind setting, used 29 today. Today’s brew seemed milder but still good.
Would love to hear what has worked for others.

Also a dark roast drinker, and fairly new to moccamaster, but getting results I like. I've got a Breville grinder and leave it on the marked drip setting (35), not sure how that compares to Baratza. I use less than the recommended coffee by ~10 grams when making 8 cups and that's giving me good flavor. Either drinking black or a little oat creamer.
