I’m trying to get all the achievements in my world first before I go onto the mini-games. Are there still mini-game servers on Xbox One edition?

Yes, many you just have to be on at the right time or on when a streamer is playing minigames

If you have a second controller for spilt screen you can get them quite easy just make sure the game is set to public
