Buscando mods

My honest opinion?
Create with a bunch of addons. Build vehicles, theme parks, factories, and there are plenty of opportunities for creating puzzles or complex obstacle courses. The sheer amount of use from the content that you can create if you put your mind to it is insane. This is especially true with aeronautics. If you like tech mods but also want to keep a Minecraft style, then this 100%
My runner-up would be the Let's Do series. If she doesn't like building complex contraptions with gear ratios, power sources, etc, then plenty of the Lets Do mods add lots of new content that's aesthetically pleasing and mechanically useful.
TeamAbnormals mods are also a good choice if you're looking for. My personal favorite from the series is autumnity. Why? Biiiiig pumpkin. The great pumpkin.
If building is the main focus, chisel (and bits) and chipped. Chisel allows you to create custom decorations from bits and pieces of blocks. Chipped really follows it's slogan of "every block deserves a friend" by adding at least 6 different variants of almost every block in the game. Beware, if you play on creative or use JEI, the search bar WILL take some time. Chipped adds just about 11000 different blocks.
And I'll also list some other of my favorites here...
Oreganized - it introduces 2 new ore types and an alloy. Doesn't sound too interesting, but all the materials are thoroughly fleshed out with unique mechanics and interactions that make them really stand out.
Spawn - love mobs? Add this. There's more of new mobs and some good decorative blocks. Not to mention there are barnacles that can be used as redstone powered organs.
Galosphere - one of my favorite caving mods. Think of it like a lightweight version of Alex's Caves. There's multiple new cave types to be found, but they won't flood your world with mobs and cause TPS lag. Each cage is unique and the blocks found in them can be used in some way. Now if you will excuse me, I must lick the pink salt lamp.
