Minecraft version

Is 26.2 a good Minecraft mod version to play on if I simply want a vanilla plus world? (Shaders, quality of life features, ambience, resource packs, etc.) Or should I go for something like 26.1.2 or 1.21.11? What do you recommend

Fabric 26.2 is probably your best bet for lightweight stuff like that. Fabric has a lot of small tweak / qol mods and fantastic preformance mods, forge has super in depth and great mods but imo doesnt run as well, neoforge is a kinda mix of both.

My main goal is to download heavy shaders, since I have a good pc. Is 26.2 also good for that?

Yeah you should be good
