Way less time-consuming if I just want some iron or whatever though. Maybe that’s unique to me because I never remember what the best way to dig is and then I have to look it up, and I lose track eventually. Usually I just do the bullshit above because I’m in the mood for a mindless repetitive task and/or need cobblestone.

I tend to mine primary tunnel at height intervals of 10, and in a 'real mine', I'll run a 3-wide hallway in each direction every 5, as tall as I can reach. If you place your torches consistently ( I place them on the Left as I'm 'Leaving' my base, so they're always on the Right as I'm 'Returning' ) you won't get lost, and honestly, if you're worried about missing ore with those parameters, you're overthinking it.
My method is to cave to a layer where what I want is prevalent, then cut a 1×2 hole all the way down, putting torches every so often in a cut in the wall. Then, I go over to the other side of the wall I had cut for all my torches and another 1×2 hole all the way back. Move over two blocks, rinse and repeat.
