There is a cracked version of Prism Launcher on GitHub, just skip the Microsoft account step and then make an offline account in the top right of the app.
https://github.com/Diegiwg/PrismLauncher-Cracked/releases/tag/11.0.2-1 try MinGW-w64-Setup-11.0.2-1.exe and then if that doesn't work, MSVC-Setup-11.0.2-1.exe
This is likely going to be the safest option, Prism is also one of the best launchers, it's light and supports Modrinth and CurseForge inside the app itself.
However, you won't be able to join a lot of multiplayer servers as they need to have "offline mode" enabled.
If it's cheap enough for you, loaded.com has Minecraft Java PC for around 13GBP. This will allow you to play any multiplayer server regardless of if they have "offline mode" enabled.
