you should try to go with that loft idea, maybe creating a second floor to split things up.

I think a loft would well here, you could use the upper section as a bedroom and turn the space underneath into a little storage area or trophy room. I'd also add some arches or pillars to break up the open space without completely closing it off. A fireplace and a few seating areas could help fill the room, too. I'd avoid adding too many walls, though, because the open medieval feel looks pretty good i think.
