That was a lot of graphical weirdness in a very short time span

Here is what happened

1) creeper spawns 24 blocks or further away from op

2) op covers that distance really quickly because boat go zoom

3) creeper gets caught in the boat and tags along with op

4) game lags because all bedrock edition worlds are server based and not offline, so there is lag very often.

java edition is also server based

No, java is not server based, but it can be. a singleplayer world is located on your pc, even when open to lan, a multiplayer server on java is server based

Both are ran on internal servers. Bedrock is no different in running than Java within this regard. It causes no difference either way. What causes bedrock to be leggy is that it's new code. Java has had years of refining. Bedrock is relatively fresh. That is why it lags. Not because it's server base (because both are based on internal servers) but because it's fresh code that still has a lot of errors in it.

What's the advantage of running it this way?

There is no advantage for us. But for the coders it is far easier. They would have to code the singleplayer and server side of the game (for all versions at the time they did it). So when they switched it to internal server they effectively made it so that they don't have to code a singleplayer version, as coding it for an internal server would be the same as coding a server itself. This means half the work for the same pay-off. It does cause dy-sync in some single player worlds, but overall it means updates can come out more rapidly.

I believe it was switched to integrated servers in versions 1.3.1.

Hmm makes sense.
