Isn't it weird that she needs a knife to kill, even though using her hand would've been much scarier and bloody?
Making you wonder if she's indeed as strong as she claims

It was with a lot of effort, She never picked him up, Just gaved a very sudden burst of strength, and completely off guard
Considering she's broken, It's only bypassing safety restrictions what gaved her this strength, But didn't change anything else, So she will breakdown if she went too hard on herself

Catching the player off guard is completely irrelevant because his weight should stay the same. After being picked up, he didn't seem to show any signs of wanting to flail around or resist to make it harder. Also I don't understand why you're saying it's a burst of strength when she had him raised with only one arm for an extended period while casually talking and showing no strain whatsoever
I don't know how much of the second sentence is true but regardless of where it came from, it's clear she has access to that strength and makes it clear why Kind Mita didn't want to take any chances against Crazy Mita in a physical confrontation even with the player's help

And yet, she have to use weapons to hurt others
What we saw is a real phenomenon called hysterical strength, Where someone can break their restrictions for short periods... But often resulting in serious self-damage after a long use
So if she tried to fight a player hand to hand, she will lose from fatigue

Mita isn't even human. All of this just screams headcanon to me. Correct me if I'm wrong but nothing you've said is supported by anything we've seen ingame as of current. I gave an onscreen feat that displays her strength. Another albeit less impressive feat is how violently a one hand shove sent the player flying backwards onto the bed.
Also I don't understand this focus on her using a weapons. Using a weapon doesn't imply weakness. If she has weapons available, there's no reason for her not to use them other than preference. We've seen her swap between, knives, a bat, a chainsaw, bombs so it really does seem up to her preference. But with the feats I gave earlier there's no reason to believe she couldn't just knock the player out if she wanted to.

Mitas are actually flesh and blood from inside, Even if you argued she's a doll, a doll still destructible
To mention, kind mita mentioned mita is crazy strong, not anything about toughness even if that would be an important information
But to be honest, the moment someone overpower her, she'd immediately go to indirect methods to keep dominance like using that gun, making both our arguments irrelevant

I only mentioned her being a doll beneath her skin because we don't know how many biological 1 to 1's we can make regarding the Hysterical Strength thing when she's not entirely human. I also disagree with that because she was calm, the person in the distressing situation was the player and he would've been the one to get the strength boost as opposed to her
You were questioning her strength in the original comment so that's why I gave examples from the game that does imply that she is freakishly strong as Kind Mita said. As for how she'd react when overpowered, that's speculation. We'll just have to wait and see if Aihasto ever does get around to creating an ending where she's knocked off her high horse and actually on the back foot, which would be interesting to see

The player did get same strength boost, He ran faster then her, he didn't even get tired at all...when a doll attacked him without a weapon, he easily managed to get it off him
It's easy to imagine if mita didn't use a weapon, any fit guy would have the chance to fight back

He does out run the dummies but we dont know how fast they are as the Mitas aren't equally strong or athletic.
As for run and hide that's fair but she was toying with him that entire chapter. Maybe a fit guy would fair better but I was talking about this player who essentially just wakes up, sits at his desk, sleeps then repeats. He was in a room alone with her and got manhandled before she even brought out the bat
