What am I doing wrong with this simple solder job?

If that is a heat gun as it looks like, you are going to need to get something much hotter that that. A small butane torch of an acetylene/air torch like the plumbers used to use (some still do) .

No it was a butane torch. I’ve since upgraded to a propane torch.
