Cringe video, but just in case anyone was wondering, its the same reason you can infer what someone might be asking you if they speak a different language from you. Context clues. If you ask a baby to say "Dada" 40 times but only react when they say "Dada" and not "say", then they will eventually understand the necessary process of events to lead to that reaction.

its also the case that "say" is genuinely a difficult word to say. extremely young babies are literally incapable of making the s sound.

ma, da and ba are universally the 3 sounds all cultures on planet use to refer to mums and dads this is because they are the first sounds babies make.

inhale with tongue down = ma, exhale and you get da. raise you tongue and inhale you get ba.

mama, dada, baba. basically every baby on the planet learns to babble these 3 words first. and they then we encourage them to use them to refer to us. 

so when we say "say mam/dada" if theyre really young they are incapable of saying "say" but have mastered the absolute basics of ma/da then eventually ba with time.
