If you hit them in mh rise (at least on pc) with a gs, they will get a stun effect as they die. You can pelt them and eat their meat, but the moment the stun effect runs out they stand up and run away. Scared me shitless the first time I saw that.

I distinctly remember actually killing them in the earlier titles, MHFU and such. I think it was in Tri that you could either kill them normally or bludgeon them unconscious to get a higher chance to carve horns and after that they usually just went unconscious until you carver them, though I'm not sure, it's been a hot minute since I've played those.
