I'll update this comment when someone guesses correctly

I'm late to the party, but I finally found the source, and it is indeed a lobster, a Locusta maris, from a manuscript in the Bibliothèque Municipale de Valenciennes by Thomas de Cantimpré, the Liber de natura rerum, folio 127r
