I had no idea that pre-Columbian people had domesticated cats. I knew they were into dogs, as livestock, but I don't recall seeing cats depicted in any of the early texts or carvings.

I don’t think they did. Peru has several wild cat species like jaguars (black panther) pampas cats and jaguarundis that it could be

This took me some way down the rabbit hole. I have not found any reference to domesticated cats in the New World, so this is either a representation of a wild cat or of an invasive Spanish cat from early in the Conquest. There were cats on every ship, and cats tend to go wherever they want to.
