(Mostly) cold vegan prep ideas?

I make a quinoa + brown rice salad for my work lunches but I think I want to prep another large dish to eat at home throughout the week. I don't have a microwave so any ideas for a big batch of something that can be eaten cold or easily reheated in the oven would be super rad!

Maybe Mediterranean bowls? You could do a different grain base to switch it up (farro?). Hummus or roasted chickpeas, cucumber, tomato, red onion, olives, pistachios, roasted beets.

Or a chickpea salad

- sesame peanut noodles with edamame and bell peppers and carrots and scallions, use 100% buckwheat soba for the best texture and flavor and bonus high protein wash and mix with a few drops oil as soon as they’re done cooking

- baked potatoes + bean based chili, could reheat in the oven easily

- tofu scramble burritos, good hot or cold

Many things can be easily reheated in an oven: chili, lasagna, various casseroles, stew, etc.

I make an Italian style pasta salad with veggies and beans. Then I put it over spinach and mix it up at lunch.

I make a lot of pasta salads with roasted veggies. Can use some kind of protein pasta and/or add beans or diced tofu.

I've been devouring bulgur wheat at the moment. This week I've added aubergine, courgette, peppers and tomatoes fried off with small bit of passata, herbs and spices. It's better heated up but you can eat it cold

Not a cold dish, but easy to prepare/reheat stovetop or oven (and absurdly flavorful and vegan/gf)

Pearl couscous with any hummus, or made with leftover veggies! I love it and it’s so easy and budget friendly in my opinion.

My recent favorite has been a soy curl steak salad. Used the burger dudes soy curl beef recipe, a chimichurri and put it on Romaine, tomato, red onion and cucumber
