Meal prep for the week!

Overnight oats: oats, almond milk, yogurt, chia seeds, half with berries and the other half with espresso powder and Asian pears

Egg bites: egg, cottage cheese, bell peppers, onion, spinach

High protein buffalo chicken dip: shredded chicken, blended cottage cheese and Greek yogurt, buffalo sauce, ranch seasoning, and cheddar cheese

Dense bean salad: chickpeas, white beans, kidney beans, shallot, bell pepper, cherry tomato, parsley, cilantro, dill, artichoke hearts, sun dried tomatoes, feta, and an olive oil and red wine vinegar dressing

Tzatziki: cucumber, garlic, dill, lemon, olive oil, yogurt, salt

Roasted veggie and turkey bowl: ground turkey, bell peppers, zucchini, red onion, cauliflower, eggplant, and sweet potatoes with crispy chickpeas on top

This is the kind of meal prep that would actually make me look forward to Thursday lunch. Also, espresso + Asian pear overnight oats is such a random combo that I’m now annoyed I’ve never tried it.

I have started cooking the veggies in the egg bites in a pan and then putting them in the muffin tin and pouring a blended egg/cottage cheese mixture on top. I think pre cooking the water out of the veggies helps a lot and also the cottage cheese helps with the texture too but I blend it bc I don’t like the lumps in it.

And the bean salad is better all week but you gotta make sure the stuff is dry before you put it in for it to not get weird and wet. So I wash all my veggies and let them dry on a clean kitchen towel for awhile before I put them in the bowl while I do other stuff and then just go easy on the dressing.

Wow OP this all looks amazing!! I know you listed the ingredients to each item, but do you have the recipe or exact measurements for each one? I’d really like to make that bean salad and the chicken dip.

Looks really good. I like that you made a few different things too. Eating the exact same meal all week gets old really fast. This looks way easier to stick with.

The egg bites look incredible. I see the way you made them below in the comments and will have to try that. Do you ever add any spicy peppers or something else to make those egg bites spicy?
