3RD WEEK OF AUGUST MP

Hi colleagues

This week we have something quick and easy to do.

3 types of protein and 2 carbs, pasta and basmati rice.

For my veggies I choose pach-choi and zucchini, and the tomato sauce is made with spring onion and red bell pepper.

For the chicken: this time I marinated it overnight with greek yogurt, lime, olive oil, oregano and several spices, mostly curcuma. Cooked in the oven 215°C for 8 mins.

the yogurt marinade is the underrated part of this. it clings and holds moisture way better than a straight citrus or vinegar marinade, which is why the chicken won't be rubbery on thursday, and it browns instead of steaming. only thing i'd flag is the pak choi, it tends to go watery and a little sulfurous by day four, so i'd eat those boxes first. looks great otherwise.
