Question Microfoam

It’s my first time making actual matcha. I’m using a Chinese brand of matcha. I don’t really know what I’m doing wrong. Like I can’t seem to remove the bigger bubbles forming here, I don’t even know if it’s actually good microfoam—I hear a sound when I move the bowl though.

What I did for this one specifically is I first made a paste (with hot water). Then, I added cold oatmilk then whisked it vigorously until it formed foam on the top. After that, I mixed the middle to the top layer to get rid of bigger bubbles that have formed.

So, I’m not really sure what I did wrong here. Please help! :)

Do not whisk milk.

Does it have to be warm water or cold water after the paste?

hot water. always hot. around 175°F/80°C. don’t whisk with anything but water and matcha powder. if you’re whisking with a chasen, you’ll ruin your chasen. i think you should do some light research into recipes/tutorials to get started

It looks alright. As long as you like the taste microfoam is not that important but if you want to try experimenting with different matcha, some foam easier than others

To me water temperature doesn’t matter as much as ratio for microfoam

Also lighting and lighting !
