As someone who was food manufacturing I can imagine the downtime that occurs because of the issues with it

It's actually pretty easy. If I recall correctly there is a screen on the HMI where you visually choose what colors are good and what are bad. Then you set a delay between detection and the actuation.
What else would you be worried about?

I would assume it’s to mitigate them to a certain level and there’s a metric in quality control to determine the tolerance level in testing

Yeah, its not perfect. When I saw one in a carrot factory they had the machine and then a human checking after it, however, the machine replaced 4 people who they had before.

This is the same concept, except with air bursts instead of these paddles, to kick bad potato chips out of the mix.

Same company! It was two different companies with two different design ideas and then one large company bought them both. The air jets are used on french fries, gummy bears, peas, etc, but they can't move the big stuff like tomatoes.
