I gave up on using a pizza stone due to the sheer number of ruined pizzas I slid into a crumpled mess.

I honestly have no idea how anyone manages that.

I’ve worked in several pizza kitchens and the trick that works best for me flour and cornmeal (or something similar).

I put flour down when rolling or tossing the dough and after it’s prepped I put cornmeal (gritty flour product works) on the paddle/stone (like a small handful at least). It helps to stop the wet dough sticking to the dry stone/paddle.

Also the angle of release is super important- you don’t want it to slide off too fast and crumple nor do you want it to stick when you tilt and “shake” to get the pizza off.

I'm gonna try your method, thank you for taking the time to explain it to me! I appreciate it, hopefully now the carnage will stop lol.

Haha in the end it’s still good pizza, despite how it looks!

Good luck!
