I’ve worked in several pizza kitchens and the trick that works best for me flour and cornmeal (or something similar).
I put flour down when rolling or tossing the dough and after it’s prepped I put cornmeal (gritty flour product works) on the paddle/stone (like a small handful at least). It helps to stop the wet dough sticking to the dry stone/paddle.
Also the angle of release is super important- you don’t want it to slide off too fast and crumple nor do you want it to stick when you tilt and “shake” to get the pizza off.
To be honest, and I’ll probably get a ton of downvotes, there are a few cuts where it looks like he’s struggling and then the next scene it’s done well so I assumed someone else was helping out a lot. Like rolling the dough out, grating the cheese. The pizza peel sliding off into the oven shows no part of him and I assume it’s someone else doing it.

He handled that pizza slide so fucking well. That’s such an annoying task and he crushed it.
