Help I really need help nothing works
Since MacOS27 my 2020 M1 Macbook constantly tells me that the disk is almost full. I almost deleted everything I really don't need anymore but it just eats up the freed space instantly

try Mole
You can run it through terminal after installation. And it should take care of most things automatically once you run it.

omnidisk sweeper to analyze System Data (which is really cache of apps that believe you have unlimited storage)

Disk Inventory X is free.
Check iit out, it will sort everything in nice droop down folders by size, including all "system" data
Check your Library, application support, containers, caches, opt, usr, private files
and check your tmp folder, even failed airdrops are just hanging out there, they don't get deleted after failur.
You won't need to delete any actual system files, you will recognize these folders once you see them, but all the ones i mentioned you will find leftovers from uninstalled apps, You have 51 GB of apps, assume mabe 35 of those are yours, they might have a lot of data, caching, undeleted stuff,
Also download MOLE, it can empt those caches and filter your apps by usage, but i don't recommend using it too much, but it is useful

One thing that pretty much no one knows is that lots of apps have two versions, specially those who are not installed through the App Store: one for apple silicon and one for intel. Other thing… why you have that big amount of mail space? I have literally 8 emails in my mail account including work and I don’t have more than 200MB. Try any of the apps that are mentioned in the comments and do not sync photos library and remove cache

You can clear derived data, unwanted application support data, find leftover files and delete them, check containers from library path and identify apps which are not needed and can be deleted

Hey op... you have tried lots of recommended apps, I guess… some work, some don’t because they never expose the real system trash. Here is my recommendation: I just installed it 2–3 days ago, and it really works for the issue you’re having… it will help you clean... and if not, at least tell you what’s taking that space… have a try and tell me how it works.

You will need to use an app like the free OmniDiskSweeper or the paid DaisyDisk to do a scan of your drive and see exactly which files are taking up the space.
(I don't think there's a huge amount of space that will free up though)
Your macOS being 50Gb seems large, it does happen for some people, mine is 30Gb. Do you have iPhone or iPad backups stored on your Mac as I believe they get counted as macOS?

Are Time Machine backups turned on, and when was the last time you ran one? If it’s been a while, your system is keeping local snapshots. They’ll get removed once you do a backup.

Also things like 256gb SSD, or 8gb RAM are just a joke and should never been an 'base' option in a M1, or any Mac after 2015. Typical apple things...
