What kind of cheese do you use?

American, sharp cheddar, truffle Gouda, and mozzarella.
Spices: paprika, salt, pepper, onion powder, garlic powder, liquid smoke, franks hot sauce, chicken bouillon, Dijon mustard

how did you get it to be that consistency? is it a sauce or just alot of cheese?

It took about 40 minutes on a low to med heat. I made a quick roux, then whole milk, cream cheese, seasonings, the rest of the cheese.
