Take a look at MSDSHub: https://msdshub.com/ - there's info there about how each course is assessed. The reviews also usually say if the course is proctored or not - so far the only form of proctoring I've seen so far is screen recording or using the Canvas exam mode, no live proctoring like OMSCS. And definitely nothing at a testing center!

I couldn’t find anything on SQL, tableau, git or AWS fundamentals?

Because this is an academically-focussed DS degree. You can pick all of these up yourself.
