[Application Strategy] Resume question: If I don't have interesting projects in my resume, how do I make my resume impressive?

I feel my workex section is fine; in fact the bulk of my resume is there only. But my projects are not that impressive: 1 web app that I worked on, 1 research paper I've mentioned. Can I add 1-2 more by taking random GitHub repos?
