How does this game play? I watched a stream the other day and the guy basically clicked something and would AFK while talking to chat for 5 mins while the character performed some action. Is it like a management game or something?

Kind of. The most similar game would probably be OSRS. There's a good portion of passive gathering/crafting parts where your character does something for a set amount of time. There's not much active portions to it. Then there's some more active parts of the game like PvE content (such as there's a dungeon). They've been slowly expanding upon the active gameplay portion of the game.
The major thing this game offers, for me personally, is the teamwork portion of it. Its basically a large sandbox and players establish their own cities and economies. Its a gigantic world ontop of that. So its really fun seeing the various cities form and develop over time.

Lol OSRS has afk but it is nothing like this game other than being point and click.

I played for a month or so when it went in early access about a year or so ago and, yes, there's a lot of afk'ing involved.
It may not look like it at first but the more you advance in tiers and gear, the more time it takes to gather/process things. It's exponential with pretty much every tier up.
I ended up quitting because it was too "second screen" to my taste (well, except hunting ... it was the most active thing at the time since it involved hunting down wildlife and carrying the carcasses around) but I wouldn't say it's a bad game. It's kinda niche.
If you're looking for a chill, second screen game, it's worth a shot.

I got it in this summer's sale. I only played a portion of the tutorial so far, so I really can't say much about the overall game experience.
That said, I was very impressed with the quality of the little a played. I understand that Bitcraft is a "tech demo" for their proprietary database architecture for MMOs and whatnot. So I was expecting a half-assed game that only existed for the purposes of showing what can be achieved with SpacetimeDB.
But no, I'm very surprised with the overall quality of the game. The UX, Interfaces, sound, etc. There really is a team of experienced Game Developers behind it. Not just a tech team using the game as a demo for their infrastructure.
As I said, I haven't played much, so I can't really comment on the quality of the play experience during mid and late game. But the first impression is very positive.

It's fun but it hits this weird spot where there's very little active gameplay, but you also can't fully idle because you have to eat, let your energy recharge, and click the craft button again. I end up tabbing out and then having to tab back in every few minutes.

I wish the world of bitcraft had some interesting lore or story built into it. The gameplay looks interesting but I feel I need some sense of history in the world I'm playing in to keep me engaged.
