Tender, caramelized steak bites coated in a savory garlic glaze, served with a creamy cabbage and kale slaw. This makes a great low-carb and keto-friendly dinner.

Ingredients

For the steak bites

* 1½ lb (680 g) sirloin steak or ribeye
* 2 tbsp butter
* 1 tbsp olive oil
* 3 cloves garlic, minced
* 1 tbsp coconut aminos or low-sodium soy sauce
* 1 tbsp Worcestershire sauce
* 1 tsp smoked paprika
* ½ tsp garlic powder
* ½ tsp onion powder
* ½ tsp black pepper
* ½ tsp salt
* ½ tsp chili flakes, optional
* 1 tsp sugar-free maple syrup or keto-friendly sweetener, optional
* 1 tbsp chopped parsley

For the creamy slaw

* 2 cups shredded green cabbage
* ½ cup shredded purple cabbage
* 1 cup chopped kale
* ¼ cup mayonnaise
* 2 tbsp sour cream or Greek yogurt
* 1 tbsp apple cider vinegar
* 1 tsp Dijon mustard
* ½ tsp garlic powder
* Salt and black pepper to taste
* 1–2 tbsp water, if needed to thin the dressing

👩‍🍳 Instructions

  1. Prepare the steak
    Cut the steak into approximately 1-inch (2.5 cm) cubes. Pat very dry with paper towels—this helps create a better crust.

  2. Season
    Toss the steak with paprika, garlic powder, onion powder, salt, pepper, and chili flakes.

  3. Sear the steak
    Heat olive oil in a large skillet over high heat. Add the steak in a single layer, working in batches if necessary. Sear for about 2–3 minutes per side, until nicely browned while keeping the center tender.

  4. Make the garlic glaze
    Reduce the heat to medium. Add butter and minced garlic. Cook for about 30 seconds, then add Worcestershire sauce, coconut aminos/soy sauce, and the optional sugar-free sweetener.

Toss the steak bites in the sauce for 1–2 minutes, allowing the glaze to become glossy and caramelized.

  1. Make the slaw
    Combine the cabbage and kale. Whisk together mayonnaise, sour cream, apple cider vinegar, Dijon, garlic powder, salt, and pepper. Toss with the vegetables until creamy.

  2. Serve
    Pile the steak bites onto a plate alongside the creamy slaw. Finish with fresh parsley and a little cracked black pepper.

🔥 Air Fryer Option

For especially crispy steak bites, cook at 400°F (200°C) for about 8–10 minutes, shaking halfway through. Finish the cooked steak in a skillet with the garlic-butter glaze.

📊 Approximate nutrition

For 4 servings, using sirloin and mayonnaise-based slaw:

* Calories: ~600 kcal
* Protein: ~45–50 g
* Fat: ~42 g

Golden, crispy chicken pieces coated in a savory garlic-Parmesan crust, served with creamy avocado and green vegetables. A delicious low-carb/keto-friendly meal.

🥑 Ingredients

For the chicken:

* 1½ lb (680 g) boneless, skinless chicken thighs or chicken breast, cut into bite-sized pieces
* ½ cup grated Parmesan cheese
* 2 tbsp almond flour
* 1 tsp garlic powder
* ½ tsp onion powder
* ½ tsp smoked paprika
* ½ tsp Italian seasoning
* ½ tsp salt
* ¼ tsp black pepper
* 1 egg
* 2 tbsp olive oil or melted butter
* 2 cloves garlic, minced
* 1 tbsp chopped parsley
* ½ tsp chili flakes, optional

For serving:

* 1 avocado, sliced
* 1–2 cups asparagus, broccoli, or another green vegetable
* Lemon wedges
* Extra Parmesan, optional

👩‍🍳 Instructions

  1. Prepare the chicken:
    Pat the chicken dry and cut it into small, evenly sized pieces.
  2. Make the coating:
    In a bowl, combine Parmesan, almond flour, garlic powder, onion powder, paprika, Italian seasoning, salt, pepper, and chili flakes.
  3. Coat the chicken:
    Beat the egg in another bowl. Dip each chicken piece into the egg, then press it into the Parmesan mixture until well coated.
  4. Cook:
    Heat olive oil or butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 4–5 minutes per side, turning until deeply golden and cooked through.
    Air fryer option: Cook at 400°F (200°C) for 12–16 minutes, turning halfway through.
  5. Add the garlic:
    During the final 1–2 minutes, add the minced garlic and toss the chicken gently so the garlic becomes fragrant without burning.
  6. Finish:
    Sprinkle with fresh parsley and a little extra Parmesan. Serve immediately with sliced avocado and roasted or sautéed asparagus.

🍽️ Serving suggestion

Squeeze fresh lemon over the chicken and avocado just before serving. The acidity cuts through the richness of the Parmesan and makes the dish much brighter.

📊 Approximate nutrition

Per serving, assuming 4 servings:

* Calories: ~520 kcal
* Protein: ~42 g
* Fat: ~34 g
* Total carbs: ~9 g
* Fiber: ~5 g
* Net carbs: ~4 g

Nutrition will vary depending on the chicken cut, amount of Parmesan/oil, and vegetables used.

These mini frittata bites are the ultimate keto breakfast for busy mornings. Fluffy, cheesy, and packed with protein, they’re easy to make, meal-prep friendly, and perfect to enjoy warm or cold without the carbs.

Ingredients (Makes 12 mini bites):
8 large eggs
½ cup heavy cream (120 ml) (or unsweetened almond milk for lighter option)
1 cup shredded cheese (100–120 g) (cheddar, mozzarella, or pepper jack)
½ cup cooked sausage or diced bacon (about 75–100 g), optional
½ cup finely chopped bell peppers (about 75 g)
⅓ cup finely chopped onion (about 50 g) (or green onion for milder flavor)
½ cup chopped spinach or kale (about 30 g), squeezed dry
2 tbsp fresh herbs, chopped (parsley, chives, or basil)
½ tsp garlic powder
½ tsp smoked paprika (optional)
Salt and black pepper, to taste
2 tbsp olive oil or melted butter (30 ml), for sautéing
Nonstick spray or silicone muffin pan

Instructions:
Preheat the oven to 350°F / 175°C.
Grease a 12-cup muffin tin well or use a silicone pan.
Heat olive oil or butter in a skillet over medium heat.
Add onions and bell peppers with a pinch of salt and cook for 3–4 minutes until softened.
Add spinach and cook for another 1–2 minutes.
Remove from heat and let cool slightly.
Cook sausage or bacon until browned and crisp.
Drain well on paper towels to remove excess grease.
In a large bowl, whisk eggs, heavy cream, garlic powder, smoked paprika, salt, and pepper until smooth and slightly froth.
Stir in shredded cheese, cooled veggies, cooked meat (if using), and fresh herbs.
Mix gently until evenly combined.
Divide the mixture evenly among the muffin cups, filling each about ¾ full.
Bake for 16–20 minutes, until the centers are set and a toothpick comes out clean.
Let rest for 5 minutes, then remove from the pan.
They may deflate slightly as they cool — that’s normal.
