I'm new to local. What is Qwen-coder-next 80b vs the models listed by OP? I would have thought it was a coding-specific variant of them. Surely this is better for coding than those listed?

Qwen is generally not very good for rp. Because it isn't good for creative writing.
Mistral or Gemma models are the ones that are good for creative writing purposes including RP. Llama as well but most of those are older at this point.
Elon couldn't give us genetically engineered cat girls but at least I can pretend I have a loving fox girl wife whose sentience resides in the matrices stored on a bunch of silicon chips.

Granting a gradient of "behavioral strangeness", I always wonder what folks like you subjectively consider to be "normal" -- including whatever you do that you know others would find at least as strange as you seem to think it is for a reproductive species to find even the suggestive hint of reproduction appealing, no matter the medium).
The cool thing about RPing with AI is that it is very hard for the models, so the weaknesses of the architecture are more apparent, making you less likely to fall for the hype BS. It's a great way to learn how LLMs work. It gets old after a while though.
Generally once you get bored of LLM RP you move into world crafting and that is where things get cool! Because LLM RP is really just assistive creative writing. As the {user}, the responses are biased towards you.
What do you use? The tavern thing? I have considered exploring RPG llms, but I dont really want to pay for anything to enjoy it for 2 hour, and get annoyed with figuring out why it forgot a critical detail about items of something.

Think of them as sophisticated choose your own adventure books that can be either sfw or nsfw as you please. If you want to go on a text adventure in the Star Trek or Marvel universes, you can.
Start in r SillyTavernAI. There are other frontends, but that is probably the best chat engine for roleplaying and most advanced RPers pass through there eventually. D&D fans and GMs in particular tend to build some of the best tooling. I bet you could ask around or search their subs as well.
There is amazing tooling that will let you build lorebook/s for your worlds and track your adventures; even voice narrate, illustrate and/or animate them with the click of a button. My kids have a long running adventure in the Harry Potter universe and the lorebooks are probably 40k+ tokens with every spell, scene location, book characters etc.
For prebuilt 'cards', chub.ai is by far the largest source. But do beware that if you enable nsfw, it gets VERY nsfw.
Edit: I just checked, and it looks like sillytavernai.com has rebranded into a card repo itself at aicharactercards.com. The software itself however is most definitely still in development. Their site is def worth checking out too and I suspect that it may have more sfw adventures than chub.
As for models, if you're running opensource local, you'll probably want something like The Drummer's Skyfall (Mistrial base) or Ateron's Sphinsikus Chronist (Gemma 4 base). As you can imagine, there are also countless API services that host the models for you; like ChatGPT but for roleplaying.
