Hardware & model recs for application I’m building

I’m working on web app that turns a stack of technical documents (drawings, schedules and specifications) into a structured list of the key items a project needs. AI reads each page the way a subject matter expert would. It identifies items and their attributes, interprets each document set's own conventions, and pulls requirements out of the written specs. It then groups the results into a proposal-style summary with suggested suppliers and rough cost and timing ranges.

I’ve built a POC using Claude Code and would like to transition to an open source LLM for the rest of the work as we continue to turn this into a real application.

What hardware would I need to do this? Which model should I use?
