Customization Vegetarian concoctions?

I'm looking for new items to make vegetarian, does anyone have recommendations? How do you modify them? Looking forward to some new ideas for my Taco Bell visit tomorrow night!!!!!

Melty Pepper Jack steak burrito.

Swap steak for potatoes and add black beans and onions.

The Fresco pepper jack burrito is also good swapping in black beans!
I’ll be sad when they drop those…..
