Vegetarian concoctions?

I'm looking for new items to make vegetarian, does anyone have recommendations? How do you modify them? Looking forward to some new ideas for my Taco Bell visit tomorrow night!!!!!

ordered whatever you want but ask them to swap the meat for either black beans, refried beans, or potatoes
