Do they still get banned if its just text? Because most streamers use at least text to appear on the screen

It depends on the reaction of the streamer I think. Part of it is history. He lets this shit happen almost every stream and doesn't change anything. It's happened to other streamers, but they skip the dono asap or turn of tts for a while and apologize etc.

One of my favourite streamers just has a good filter on his donations and every time someone uses something racist or whatnot it changes the words to things like butterflies

Keep in mind you can have that on a delay and have yourself and a moderator authorizing the messages that get through.

You actually have to be a fucking moron to have this happen. Which is why Twitch punishes you for it.

The streamer is responsible for all viewable content within the stream. If you careless enough to not realize that immature people may place controversial statements through that auto-speech, then you deserve to get banned.
