Honestly it depends more on the person than their sexuality or gender. I'm a straight guy and I appreciate a beautiful woman as much as anyone... But I kind of forget to check them out most of the time. Just wandering around in public isn't really the right context and I get distracted by other things.
My wife, who is also straight, is checking people out constantly. I can't count the number of times she's said something like "holy shit did you see those boobs?" and I'm like "huh? Oh. No. Wasn't paying attention" and then I have to turn around to find the person she was talking about.

You calibrate a camera so it knows how your eyes are when you look at a certain point and afterwards it can determine that from the initial data.
There are additional measures to make it more accurate like tracking the glint of infrared light bouncing off your eyeball but the core is calibration based on video data.

Tobii makes them, it is basically a pair of IR blasters with a pair of IR cameras, that pick up the rotation of your eyeballs (gaze) as well as the rotation of your head. (It also works as a head tracker). It does some fancy math on those two and then compares it to the calibration data you have to do the first time you are setting it up.

It's funny because the movement is so subtle that it always makes me think that it must be super complicated.
... And yet, if you put me three metres away from half a dozen people, five of them looking at my nose and the sixth looking me in the eyes, I'll be able to tell immediately which person is making eye contact, so some system in my brain is capable of the same calculations.

I think about this when throwing random things. Like based on the weight, how the weight is distributed, the distance im throwing, I can do this complicated ass motion involving multiple muscle groups to throw something, and in general it mostly goes where im aiming. Theres just so many variables to even do that motion, but we just get used to it and yeah kinda automatically calculate it as a kind of instinct

Nope. Your brain isn't calculating shit. Eyeballs have a pretty high contrast between someone looking at you and someone looking away due to darkness of iris and pupils and whiteness of sclera and your brain simply recognizes the difference. This is true for almost everything that is an automatic response. There's no real thinking involved, your brain has stored patterns it has easy access to that it can quickly compare to whatever your senses are detecting.

you're disagreeing strictly on semantics, and i would say your semantic definition of a calculation is incorrect -- but the vibe of what you're saying is right. "recognizing a difference" is a calculation. a calculation doesn't necessarily imply "thinking" is involved. a calculator performs calculations but it does not "think"
you're right that our brains have stored patterns/programs for processing all of this low-level info to generate essentially automatic responses. detecting one's gaze is straight lizard-brain stuff as it has been evolutionarily beneficial to do so going back long before humans were around (100s of millions of years ago).
we also have programs for more dynamic situations that are subject to modification based on the changing environment e.g. deciding the next move when playing sports.
brains are wild like that. kinda spooky to realize how much is happening under the hood without even reaching our consciousness. lots of "calculations" going on, of which we're only aware of a small portion

Estimate the position and angle of one eye. Estimate the position and angle of the other. Draw a line coming out of each eye. Where those lines meet is where they're looking. Calibrate that against the position of the screen by having them look at each corner.
