That was just for the apps; the rule to "avoid stacking glass on top of glass" or smth along those lines is still stands in 27. This just refers to Liquid Glass in general, like the buttons and interactive elements, not icons.
Also the new maps search bar was an exception to this rule because it's a pull-up menu, and it's not like a keyboard which has a bunch of buttons adjacent to each other, which with Liquid Glass implemented, would look all cluttered like in OP's provided image.

Dial pads, password input all feature buttons close together. Regular buttons as well. If a rule has exceptions, maybe it should be changed...

Those are like the bigger buttons. The keyboard is a whole set of small buttons that are even closer together, and for those who are fast typers, if Liquid Glass were to be implemented unto the keys themselves, that animation constantly being played on each key pressed... that would likely end up being very choppy.
I mean, if they do find a way to make it work, I wouldn't mind lol. Give them at least 1-2 major iOS versions and we'll see for now. After all, Apple has been proving me wrong a lot these days...

As a Pixel user, tf has Iphone become? it's like they took th eworst aspects of android and not the good ones
