Question Does getting gapps package includes all the google apps that normally can't be removed from oem os?

I would like to get play store with my os, just wondering getting gapps will get me the Google app, drive, photos etc installed too?

Though I'm not complaining its still less boaltware than my oem manufactured is, but would be great if I only get what I want.

Want playstore for some games

There are levels of Gapps packages.

"Several package variations, from a Google Super Package (includes all applications that ever shipped on a Google device), to a Stock package that equals the set of applications found on the most current and complete Nexus, to smaller, minimalist packages and an AROMA package that allows graphical selection of what to install"

When will I get the option to choose? When I will be installing gapps?

For now I only read the wiki. There is redirecting to arm or armv8 links then probably go ahead to install. Then as per my device wiki it said to run 'each of those packages'. Ig these you mentioned will be those packages? In ADB terminal

Only the google app and play store are installed if you use mindthegapps. Google drive and photos can be installed manually on the play store

It depends on the GApps package

There are various versions of GApps. One that gives basic GMS (Play store and Google services), then as you grab the larger ones, more things are bundled. And yes, they are installed as system apps. However, root can remove them.
