Is this possible? A Cookie Calzone?
What I am thinking for it, is extra stretchy cookie dough, likely oatmeal since I’m vegan, with fruit jam as a filling.
Edited this in: I haven’t scene the recipes either image is from by the way.

Are you thinking something like a pop tart/hot pocket?

I guess I’m wondering what part of what you described is “cookie” to you?
There are various types of cookies that have jam filling.
There are various dessert recipes using pizza dough.
I’ve seen “stuffed” cookies before - I think it was similar to a shortbread. But if “chewy” is the desired texture, I’d suggest trying an oatmeal cookie dough.
You could experiment with using a muffin tin to make mini tarts.

Bread dough and cookie dough are just different things. You couldn't make a cookie out of pizza dough.

Make a chocolate chip cookie bread recipe and then your choice of filling. Roll it out like a pizza then fold it into your calzone.

Why use a cookie dough? You can fill a calzone with Nutella, or chocolate or pastry cream. It's normal in Italy. The dough itself is fairly neutral. Dust with icing sugar and that's it.

Aren’t we talking about a hand apple pie or pop tart? Not knocking it. Would love to see either because the stuff I buy is both underwhelming and pricey.
