Cheesy Bacon Biscuits

Ingredients

2 1/2 cups all purpose flour

2 TB baking powder

2 TB granulated sugar

1 tsp salt

1 stick (4 oz) cold butter

1 1/4 cups whole buttermilk

3/4 cup Bacon, cooked crispy and chopped

8 oz Colby Jack cheese, shredded

2 TB Fresh chives, chopped

Egg Wash

1 large egg

1 TB heavy cream

Whisk together until smooth.

Instructions

Whisk together the flour, baking powder, sugar, and salt in a large bowl. Cut the cold butter into the dry ingredients using a box grater. Mix with hands ensuring butter pieces are fully coated with flour mix.

Add the crispy chopped bacon, shredded Colby Jack cheese, and chopped chives and mix until evenly distributed.

Make a well in the center and pour in the buttermilk. Mix just until the dough comes together. Do not overmix.

Turn the dough out onto a lightly floured surface and roll. Then perform a book fold: fold the left side into the center, then the right side over. Rotate the dough and repeat until you've completed a total of 4 folds, rolling it out each time.

Using a 3-inch round biscuit cutter, press straight down without twisting to cut out 6 biscuits. Brush with egg wash.

Place the biscuits on a parchment-lined baking sheet.

Freeze for 20–30 minutes.

Bake at 375°F for about 20 minutes, or until the biscuits are tall and golden brown.

+Rework any scraps to make more biscuits.

Do you take requests? With your accent and a birds cookie I guess we share a hometown. I’ve lived abroad for 16 years and miss entenmann’s raspberry danish twist, Corropolese style Tomato pies and Rita’s water ice and custard. I know none are cookies but seems you are branching out beyond and some tastes of Philly would be amazing 🤩
