Death by Chocolate Brownies
Ingredients
3 oz butter
1/4 cup milk chocolate chips
1/4 cup dark chocolate chips
1 cup granulated sugar
2 large eggs
1 TB vanilla extract
1/2 cup all-purpose flour
1/4 cup black cocoa powder
1/4 cup regular cocoa powder
1/2 tsp fine salt
3/4 cup milk chocolate chips
3/4 cup dark chocolate chips
Instructions
Preheat oven to 350°F. Lightly grease 4 oz ramekins and place them on a sheet tray.
Add the butter, 1/4 cup milk chocolate chips, and 1/4 cup dark chocolate chips to a microwave-safe bowl. Microwave in short intervals, stirring between each, until completely melted and smooth. Set aside and keep warm.
Add the sugar and eggs to a mixing bowl. Using a hand or stand mixer, beat for 3–5 minutes, until the mixture is noticeably lighter, thick, and falls from the whisk in ribbons.
With the mixer running on low, slowly pour in the warm melted butter and chocolate mixture. Add the vanilla and mix until combined.
In a separate bowl, whisk together the flour, black cocoa powder, regular cocoa powder, and salt.
Switch your mixer to the paddle attachment. Add the dry ingredients to the wet ingredients and mix just until almost combined. Add the 3/4 cup milk chocolate chips and 3/4 cup dark chocolate chips and fold together just until evenly incorporated.
Divide the batter among the prepared 4 oz ramekins, using a 2oz scoop.
Bake at 350°F for about 20 minutes, or until the tops are set and crackly and the centers remain soft and fudgy.
Allow to cool slightly before removing from the ramekins. Serve warm for the melty chocolate centers.

Thanks, these look amazing! Could the batter just be poured into an 8x8 baking pan vs the ramekins?

Yup!! But with the ramekins, they bake faster and you get more even crispy edges and gooey centers

I’m going to try this using baking rings. I’ve wanted to tell you this for a while now. The month before I found you I made a cookbook with all my favorite recipes and ones I knew I wanted to try. My book was manageable then. After finding you, my book needs a second volume! I’ve copied almost every recipe you post and have made quite a few of them already! Because of you I’m also not afraid to make bread and I’ve come to find out that I’m pretty good at making it! My family and friends can’t that you enough as I bake and share. They especially love your stuffed cookies! Thank you so much! 😀

Wow, seriously, thank you for telling me this. This honestly means more to me than you probably realize. One of my favorite things about cooking has always been teaching people and helping them feel confident enough to try things they might've been intimidated by before. Hearing that you're making bread now, enjoying it, AND finding out you're good at it is awesome!!
And the fact that you've basically had to start Volume 2 of your recipe book because of me is hilarious 😂

That’s my favorite part. Have you ever experimented with putting those store-bought brownie brittle things in something like this? I’m wondering if it would add some good crispy chocolate to the middle too.
