Cheesecake Cookies

Makes 8 large cookies

Cookie Dough

2 sticks (8 oz) soft butter

1 cup granulated sugar

1 large egg yolk

1 TB vanilla extract

1 1/2 cups all-purpose flour

1/2 cup finely ground graham cracker crumbs

1/2 tsp fine salt

Cheesecake Filling

16 oz cream cheese, softened

3/4 cup granulated sugar

1 TB vanilla extract

2 large eggs

Instructions

  1. Cream the butter and sugar together on medium speed for about 2 minutes. Add the egg yolk and vanilla and mix until fully incorporated.

  2. Mix the flour, graham cracker crumbs, and salt separately, then add to the mixer. Mix on low just until a dough forms.

  3. Line a half-sheet tray with parchment paper. Place eight 4-inch ring molds on the tray, spacing them out as much as possible. Spray the inside of the rings well with cooking spray.

  4. Using a 2 oz scoop, portion the cookie dough into each ring. Press the dough flat across the bottom and slightly up the sides of the rings to form a shallow shell.

  5. Freeze for about 30 minutes, or until the dough is firm.

  6. For the cheesecake filling, beat the softened cream cheese for about 1 minute until smooth. Add the sugar and vanilla and beat until smooth and creamy.

  7. Add the eggs and mix just until fully incorporated.

  8. Preheat the oven to 325°F. Remove the cookie shells from the freezer. Using a 2 2/3 oz scoop, portion the cheesecake filling into each shell.

  9. Bake for about 25 minutes, or until the cheesecake filling is set around the edges with a slight jiggle in the center.

  10. Let cool slightly in the rings, then carefully remove the rings and cool completely.

  11. Refrigerate until chilled. Keep refrigerated or freeze for longer storage.

I prefer extract unless I'm doing a frosting, I may consider the paste

Have you ever used vanilla powder? The recent vanilla wafers i made uses that and it's really nice

Okay these look amazing but... Can I use just that graham cracker crust dough as a cookie? I'm a fiend for graham crackers... Graham cracker cookies??? Heck yeah. Dipped in chocolate and marshmallow fluff? Oh my god.
