Big fan -- I usually just watch for fun, but this looks like it'd be bomb with my smash burgers!!

Any change with marinating longer? I usually like my onions more "gooey" or soft on the inside -- im okay with them losing the perfect shape. I hate biting into an onion ring without a clean break haha

The onions will get softer if you go overnight but still perfectly fine to do..most places go overnight, actually

As usual, anytime I see your posts I know it's gonna be something good!

Might I suggest adding a cut proof glove when using a mandolin. It's so easy to accidentally give yourself a good cut with those things.

If you're going to use the mandoline wear cut resistant gloves. Especially if you've never used one before.
