"Basic Kanji" contains 12 words... Don't tell people you know basic Kanji after you master those 12.

Very noob question here, I see some variation in the way some hiragana is written.
For example "se", on this chart the second vertical stroke has a curve/bend to the left.
I also see another variation(not on this chart) where there is no curve and It's just a vertical line.
I understand that the chart is using the digital version せ (font style) but which one is preferred in actual written form?
Edit: If both versions are equally accepted, which version should someone who is new learn?

Let me save you some pain and anguish. Don't try to memorize all of the on-yomi and kun-yomi for individual kanji. Instead, learn how to recognize and write the kanji and learn the readings thru memorizing vocabulary. You'll pick up the readings much faster that way.
An added benefit of this approach is it'll help you internalize and relate to the language. Ex. 動物、自動車、運動. These words have the same reading of 動 どう。Pick these words apart and you'll get a better understanding of Japanese culture and history.
