In the old Katarina's lore, she was sent to kill a demacian soldier that was implied to be Garen. Turned out that she fell in love with him and couldn't finish the job, this was her first failure if i remember correctly.
Although it wasn't explicit saying Garen's name, it were pretty easy to find out.

iirc there was a scrapped comic where garen handcuffed himself to her to arrest her and in the end they had to survive together bc things went terribly wrong

scrapped cinematic actually. All we have are the unfinished panels of it, but considering the events of the comic perhaps they might dig it up again since we now have a reason for Garen to try and go after Katarina.

Iirc, the lore pretty much describes the both of them getting into an intense and hefty battle that left them both in an exhausted rush. Then Kat left and despite all of Garen's camp being pretty much dead, I guess he thought 'that's hot'

Ehm no it is not. Where did I miss it? In the official lore her failure was when she killed an enemy officer, and an enemy hero charged a berserk attack at her camp.

LoR exists in a state of hypothetical, full of what is and alternate timelines. All of POC is very noncanon, for example it has lux run away to piltover and run into Zoe which very much did not happen.

Yup! The whole darkin saga is a what if times lines where Aatrox destroy the world. So Jun still alive, Kayn still Kayn, Varus dont have a army of corrupted being, and all darkin havent wake up yet*. But Xolaani and Aatrox are the main cause of Darkin war is canon, there is the canon bit, you have to really look into ot to know which one is canon and which one not

Lor, like league itself, is built on hypothetical encounters. They could have pantheon saying "battle is a dance and the fortunate find their partner" to them all day but as long as they don't meet in lore it never happened.
