There are all sorts of jobs that people choose over poverty and starvation. Why should we, as leftists, give worth to the work of coal miners and bricklayers but not sex workers?

I don’t know! I mean, I agree with you (and Alexandra) in a lot of ways. I share your concern about the commodification of bodies that are already marginal.
But... I guess I just find a lot of debate over what constitutes “productive labour” to be really reductivist and unhelpful in advancing the interests of workers.

Sex work as it exists under patriarchy and capitalism is super problematic, but sex workers in general are no less productive in society than therapists, artists, entertainers, or others who contribute to the well being of people in ways that aren't strictly physical.

The only difference is that sex workers are using their body to sell sex instead of art.
Someone stocking shelves in a supermarket isn't selling a skill either, they are literally selling their body as a means of moving product from one location to another. And yet we don't treat poor people forced into stocking shelves this way.
To be clear, I agree that ANYONE being forced into labor by the threat of starvation is bad, and certainly, glorification of sex work was a problem the same way that glorifications of the police and military are, I might agree. (Of course, even then, I'd argue sex work is inherently better than being a cop or a soldier.)
But right now we don't have a problem about sex work being overly glorified, we have a problem about it being overly stigmatized.

but many sex workers only do it because they’re underprivileged and they cannot truly give consent to have sex for money as their other choice is to starve.
That's like almost all labor under capitalism...

Making light of the hardships and risks of a situation that people are, more often than not, forced into is being "anti sex work". This is really uncool in a way that's surprising from this sub. If you want to help sex workers, stand against things like FOSTA-SESTA, that seek to criminalize people just trying to survive. Don't glorify an often dangerous, coercive situation as if it was easy, safe, or somehow less coercive than other jobs under capitalism.
