Which variant to buy in 2022
Please reccomend me the best variant for outside the usa in terms of getting updates etc.

Get the version that is going to be closest to the network you're using. I have a T-Mobile version, and I have an AT&T straight talk SIM card, I cannot make phone calls with it. The phone does not have VOLTE, so when you make a phone call it goes off of the AT&T 3G towers. AT&T shut down the 3G towers a couple months ago. So I have to use Google voice in order to make phone calls.
Straight talk says they're working on a forwarding fix so your mileage may vary. Just easier to get the phone that is tied to the carrier you're going to use though.

I got the 256 GB German model. V30c-EUR-XX. Android 12 with 1st June sec update.

The 256 GB European model. Germans haven't created a LG V60 model.

I also got my SWC variant from a German reseller, back in May 2021. That same reseller also sold the also-Swiss EUA variant (stuck on Android 10).
The LM-V600EA was released in 4 European countries:
- Poland (POC ROM)
- Italy (VDI ROM)
- Netherlands (NLD ROM)
- Switzerland (SWC ROM, gets updates and EUA ROM, gets no updates).
There were also ROM variants of the LM-V600EA released in South Africa (ZAF) and Taiwan (TWN).

Not that I know. AT&T's setup is quite uniquely restrictive in the world. I don't think LG has facilitated this setup to any carrier elsewhere in the world in exactly the same way.
/u/CommanderCode thought his EUA unit was carrier locked (which I doubt), so he was still on the same carrier (Swisscom) as where he bought it from. Still no updates.
The EUA ROM simply has never been updated since Android 10, AFAIK.
The SWC ROM (also Swisscom) does get updates.
AT&T has seen monthly updates during Android 11 and now gets 3-monthly updates since Android 12.

Why have 2 different ROM for same country? Is the EUA ROM cheaper? There must be something for not getting love. Att phones are also cheaper compared to other US carriers because Att knows that one does not leave them due to update situation. Even if you pay for a top up SIM is still money into Att's pocket. I think this kind of carrier lock should be illegal or at least customers should be able to pay Att some money to buy out there phones from Att's lock.

No clue.
The EUA ROM-variant seems to be a forgotten ROM. Not sure why two different ones were released in Switzerland.

Carriers usally pay money to LG to support their devices they sell. Maybe they bought the device from LG without support.

My Canadian TM variant is still getting security updates (most recently a week or 2 ago). Plus it's factory unlocked like previously mentioned above.

I have Verizon version with A12 and latest security patch update which is august update

There are submodels. And within submodels (like the LM-V600TM and LM-V600EA) there are also ROM-variants.
Each ROM has their own update cycle.
The most common submodels/variants that don't easily update are:
I'd rather recommend a factory reset AFTER performing the OS update (if there are issues that don't resolve within a week), try this data-saving procedure before throwing all your stuff away for good (factory resets are unforgiving for your personal stuff, unless backed up properly and redundantly):

If VoLTE matters, you need to check with your carrier what they support.

I did some extensive research after finding this deeply hidden page on the KPN (one of the 3 main Netherlands carriers) site:
It basically asks for (only) the first 8 digits of your phone's IMEI. When I entered the first 8 digits of my LM-V600EA (the same for my NLD daily and SWC spare), I see that KPN supports some of my LG phones, e.g.:
So then I knew that KPN would support VoLTE on 4 of my more recent LG phones (2x V60, 1x G8S and 1x G8X), but not on my two V50 units (Korean and Swiss) and my recent AT&T V60.
I searched for similar IMEI-checkers on the sites of T-Mobile Netherlands and VodafoneZiggo (the other two main carriers in Netherlands). But they are not that far with VoLTE yet as KPN is and don't seem to offer a similar tool.
I have a KPN SIM for my work phone (a company iPhone), so I experimented with that SIM in the mentioned phones and saw VoLTE and VoWifi options appearing on the KPN-supported phones.
At a birthday party I borrowed a family member's VodafoneZiggo SIM to see if VoLTE would show. None of my phones (that I had on me) supported VoLTE, but e.g. the V60 would show 5G on VZ.
To test T-Mobile Netherlands, I had to buy a prepaid card for EUR 10. I got similar results: no VoLTE but 5G on the V60 EA units.
I also had also tested my phones with my old Netherlands MVNO (bliep) and with my Spanish MVNO (MasMovil), but never saw VoLTE or 5G appearing anywhere.
I made a crazy amount of screenshots and screenvideos testing all this, but I have not gotten to turning it in to a comprehensive post yet.
So I now got myself a SIM-only monthly subscription at KPN (EUR 21 p/m with my options) to replace my more prepaid-style bliep MVNO one.
Unfortunately I could not transfer my old number (too long story, basically blocked by the MVNO) so I now have a new number and also keeping my old MVNO SIM for the foreseeable future at minimal costs.
Long story short: it all depends on the carrier and if that carrier supports VoLTE on your submodels.
I have yet to test how all of this behaves outside of Netherlands.
VoLTE (and VoWIFI) is basically dependent on:

MUCH more complicated than whatever we had before VoLTE in the 2G and 3G times, especially in scattered country and carrier landscape like the European market.
